Sweet Treats for the Holidays

It’s the best time of the year to enjoy sweet treats, and if you’ve baked lot of Christmas cookies recently, you may actually be in the mood for a no-bake, easy to create dessert to serve to guests or include in cookie boxes this year. December is a time for entertaining people, catching up with friends and family, but it’s also a time to relax and enjoy the holidays. And what better way to relax than with some Danish rum and chocolate treats? Whether it’s the busy lead-up to Christmas or you’re in that awkward in-between period of Christmas and New Year’s, these treats are the perfect choice.

Type of Truffle

These romkugler are a type of truffle, but rather than being made with a chocolate ganache, they are made of leftover cake. This is great, because if you ever have any leftover baked goods (this goes for muffins, cookies, cake, and most sweet, soft things), you don’t have to let them go to waste! Just toss them in a mixer with some rum, jam, chocolate, and cocoa powder, shape them into balls, roll them in coconut (or sprinkles, chopped nuts, etc) and voila! A very impressive and decadent dessert. In Denmark, this is a Christmas-related treat, but we would definitely recommend serving it as an easy New Year’s dessert too. But then again, there shouldn’t be any strict rules when it comes to dessert, so we say make them anytime, anywhere, for any occasion.

Tips & Tricks

This recipe is so simple. We tend to use raspberry jam, since that’s what we usually have at home, but any jam would really work. Make sure you use dark chocolate, since it cuts the sweetness of the cake/cookie base and balances out the flavor. Rum is, of course, a pretty key ingredient in romkugler, but if you don’t have any, you could honestly add bourbon, port, or anything else you happen to have. Obviously you can also omit it and make them alcohol-free. When it comes to the decoration, you can adapt it however you like. While we would recommend sprinkles, coconut, or chopped nuts, it’s truly up to you what you use. We hope you try them – they’re incredibly delicious!

IMPORTANT NOTE:

We always bake using a digital scale and the metric system (grams and milliliters). We can’t promise that our cup measurements will be as accurate! Additionally, we bake and develop our recipes in a convection (fan) oven.

Ingredients
 
 

  • 300 grams pound cake, leftover cake, muffins, or soft cookies
  • 100 grams dark chocolate, melted
  • 15 grams unsweetened cocoa powder
  • 2 tbsp jam
  • 1.5 tbsp rum
  • Unsweeted coconut flakes for rolling

Instructions
 

  • Crumble the pound cake/leftover cake into a medium bowl or the bowl of a stand mixer.
    Breaking up cake into crumbs.
  • Add the melted chocolate, cocoa powder, jam, and rum to the cake crumbs.

  • Mix until a paste or sticky dough forms, either using a rubber spatula or the paddle attachment on the stand mixer.

  • Shape the dough into balls with your hands.

  • Roll the balls in shredded coconut – you can also use sprinkles, cocoa powder, or anything else you'd like!

  • Repeat with all of the dough.
  • Keep these at room temperature if you prefer them softer, or in the fridge for a harder texture. Enjoy!
