Today’s Recipe
While we originally posted this dip recipe a couple of years ago with our recipe for knækbrød, we wanted to give it its own moment and some new pictures! And we thought there was no better time than the holidays to share this with you, as you can easily whip up a batch to serve as an appetizer or snack. You can make it on its own if you want to serve it with some store-bought chips or crackers. But we also have our own recipes for crackers, which you can find here (with seeds) and here (no seeds). Use these recipes this holiday season and we can promise they’ll be a hit with everyone!
Dip Formula
Now, when it comes to a good dip, I would argue that there’s a formula to it. You need a good base, which for us is usually sour cream or Greek yoghurt as we don’t love mayo. Then, you need a punchy flavor, like garlic or onion, different herbs, or lemon/lime for a citrusy kick. Extra seasonings never hurt, like pepper, paprika, chili powder, etc. Salt is an absolute must, of course. Finally, you need something crunchy and fresh, like some herbs or chopped cucumber. That’s the equation to a perfect dip and is how we came to develop this delicious recipe!
Ingredients
We’ve kept the ingredients for this dip pretty simple: onion, sour cream, cream cheese, dill, parsley, lemon juice, garlic powder and salt and pepper. You can definitely replace these with other herbs or flavors if you like, but obviously it would then be a very different dip! However, good substitutions include Greek yoghurt instead of sour cream, a bit of mayo if you like the taste instead of the cream cheese, a bit of chopped cucumber if you want something fresh and crunchy, and obviously lime to replace lemon.
Instructions
Now when we say this dip is easy, it definitely is, but it does take more effort than just mixing the ingredients together. First, chop the onion and caramelize it in a pan with some butter. Make sure you give it enough time so it’s not crunchy – you don’t want raw onion in your dip! Then, combine with the other prepared ingredients, in this case the sour cream, cream cheese, chopped herbs, seasonings, and lemon juice. Taste for seasoning – definitely add more if it needs it – and enjoy with crackers or chips. We hope you make this and please leave us a comment below if you do!
Herb and Onion Dip
Ingredients
- 1 medium onion, finely chopped
- 2 tbsp butter (for cooking)
- 225 grams sour cream
- 115 grams cream cheese, softened
- 4 tbsp chopped fresh dill
- 4 tbsp chopped fresh parsley
- 1 tsp garlic powder
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Make sure your cream cheese is softened so it's easier to mix in with the other ingredients!
- Prep the onion by peeling and finely chopping.
- Add your butter to a pan and cook your onion over medium heat until caramelized and lightly brown, about 15 minutes. Add water to the bottom of the pan if needed as cooking to soften them quickly. Set aside to cool slightly.
- Meanwhile, wash and chop the dill and parsley.
- Add sour cream and cream cheese to a mixing bowl. Whisk together if needed, but usually we just mix it with a spoon to combine.
- Add in dill, parsley, garlic powder, lemon juice, salt and pepper to the sour cream mixture.
- Mix together well.
- Add in onions and mix again.
- Refrigerate if not serving immediately. Enjoy!
