It’s a lovely Friday afternoon, and the week is winding down. The end of the week is the best, because it feels like there is so much time ahead of us to relax and reflect before the next week begins. I always look forward to the weekend, mainly because it is when I have the most time to bake. I can test out new recipes or try something from a cookbook. Sometimes, I prefer to just make some tried and true baked goods in preparation for the week ahead. For me, Sundays are one of the best days to bake. You have time on your hands and can prepare bread or sweets for the next few days. I find that anything that makes weekdays easier and less stressful always cheers me up! Hence…today’s blog post. This post lists a few recipes we love to make on Sundays, as they are simple to make and can last over multiple days as snacks or desserts.

Orange and Chocolate Chip Oat Cookies

These cookies are so simple to make, even if you haven’t made chocolate chip cookies before. They have an amazing texture and flavor from the oats, chocolate, and orange, so they are sure to be a hit. You can even freeze some of the dough after scooping it into balls that can be baked individually throughout the week! Not to mention that these are the perfect addition to a lunchbox (for kids and adults!). Finally, there is nothing that improve a tough weekday more than having a delicious cookie at home, ready to be eaten for dessert or a snack. Bake these on a Sunday for a better week ahead!

Landbrød

Now, this is a recipe that I personally love to make on Sundays. It leaves you with fresh baked bread for the rest of the week, and it is so easy to make that it doesn’t even require any kneading! The loaf (or loaves) end up with a wonderfully crunchy and golden crust. The inside is fluffy and delicious, the perfect vessel for lots of butter and salt. Use it to make sandwiches, eat as a side with soup or stew, or just cover it in butter and eat it as a snack. Whatever you do, definitely bake this bread! You won’t regret it.

This artisanal and easy-to-make country bread is absolutely delicious as a part of a sandwich, a base for garlic bread or bruschetta, or just smeared with butter! However you eat it, it is fluffy and flavorful!

Gulerodsboller

These are probably one of the most dynamic rolls we have to offer. Filled with seeds and veggies (carrots, of course!), they offer plenty of nutritional value. They are slightly sweet and super fluffy; honestly, they have one of the best textures of any roll I have ever had. They can be topped with savory or sweet toppings, which is important. Why? Because everyone in your house will love them, no matter what they like on their bread. Have them for breakfast with avocado and eggs, for lunch as a base for a sandwich, and for dinner alongside a bowl of soup or stew. You can even top them with butter and jam, peanut butter, or Nutella for a snack/dessert! Best of all, they are not difficult to make. And you can get other things done or watch TV while the dough rises!

These fluffy bread rolls are full of grated carrot and sunflower seeds. Although you can’t taste the carrot, it adds a light sweetness and moistness to the roll that will make these a serious contender for the best bread rolls we’ve ever made!

Pizzasnegle

If your Sundays are usually spent trying to get ahead of the next week, then this recipe is for you. It makes the perfect lunch option, especially for kids. These “pizza snails,” as we call them, are rolled up buns that taste like pizza! They are not any more difficult to make than a regular bread roll. On the other hand, they are a bit more creative and a nice savory twist on a cinnamon bun pastry! Toss a couple of these in with everyone’s lunch and you might be making them every Sunday from now on 😂

Chocolate Truffles

This is a treat that is so nice to have around the house. You can reach for it whenever you are craving something sweet and chocolatey or as a little dessert after dinner. A dessert also really can’t get much simpler than this recipe, which uses heavy cream and chocolate and whatever flavorings you like. Set aside a bit of time to roll them into balls and coat them in cocoa powder if you like. And voila – you have the most delicious snack of all time!

The richness of these smooth and velvety chocolate truffles is perfectly balanced out by the addition of licorice salt. But if you don't like licorice, don't worry – you can use regular salt instead!
