Crunchy & Versatile Almond Cookies

If you love the flavor of almond, you will absolutely die for these cookies. They are crispy and crunchy, and taste amazing with a cup of coffee or tea. They can also be incorporated into other recipes for cake or trifles, such as æblekage! This is not actually a cake as much as it is a layered dessert. Just add apple sauce, crushed up makroner, and whipped cream! Optionally, you can also add a custard – we had some leftover kagecreme and it was amazing as a layer in this apple dessert.

Super Easy Recipe

Best of all, makroner are among the easiest cookies to make, because you just mix your ingredients together, pipe them, and bake. Little effort, but an amazing and impressive outcome!

Buy or Make Your Own Almond Flour

Of course, almond flour is a necessary ingredient in this recipe, but it can be a bit expensive (at least in the US), so we would recommend either buying it in bulk or making your own! You just need to make sure you either buy skinless almonds, or peel them yourself (soak them in hot water for a few minutes – then the skin will come right off!), then blitz them in a food processor until they become almond flour. Don’t blitz too much, or you’ll end up with almond butter instead!

A Challenge to Our Readers: Try to Make this Vegan!

We tried to make this recipe vegan…but it was pretty impossible. The egg whites are super hard to replace, because they give the cookies both structure and help them rise. But if any of our vegan followers have any ideas or want to try it out, let us know how it goes!

Makroner (Almond Cookies)

IMPORTANT NOTE:

We always bake using a digital scale and the metric system (grams and milliliters). We can’t promise that our cup measurements will be as accurate! Additionally, we bake and develop our recipes in a convection (fan) oven.

Ingredients
  

  • 100 grams (1 cup) almond flour
  • 150 grams (1 ⅓ cup) powdered sugar
  • 6-7 tbsp egg white
  • 1 tsp almond extract

To Make 4-6 Single Serving "Æblekage med Makroner" Desserts:

  • 120 ml (1/2 cup) heavy cream, whipped (add sugar if you want!)
  • 16 crushed makroner cookies
  • 225 grams (3/4 cup) unsweetened apple sauce
  • 1 portion kagecreme (optional!)
  • Process: simply divide ingredients among 4 single serving glasses – we like to layer kagecreme, makroner, applesauce, makroner, and then some whipped cream on top!

Instructions
 

  • Preheat oven to 300 degrees F (about 150 degrees C).
  • Measure out almond flour and powdered sugar in a mixing bowl or a food processor.
    Mixing ingredients in a food processor.
  • Add wet ingredients (egg whites and almond extract) as well. Mix together (by hand or using the food processor) until you have a sticky and pipe-able dough. You can add more egg white if needed!

  • Add dough to a piping bag and pipe out 1-inch round cookies. You can use some water to flatten the points down and create a rounder shape!

  • Bake for about 25-30 mins until the cookies are almost solid (they will harden as they cool). The final texture should be crunchy and not soft! We've found that baking on a convection (fan) setting dries out the cookies much better. If you are using a regular oven, you may have to add around 10 minutes to the cooking time. If you do end up taking the cookies out too early, you will still be left with a delicious cookie, it may just be a bit soft in the center!

  2. How long can I store them for?

      These are best eaten within a few days, we find that they can lose their crunch in more humid climates and get a bit on the softer side after that amount of time! If you don’t mind that, they will last up to a week!
