Makroner (Almond Cookies)

These crunchy, almond-flavored cookies are delicious on their own, or you can use them in recipes for various cakes and desserts, like our strawberry trifle recipe!

Ingredients

  • 100 grams (1 cup) almond flour
  • 150 grams (1 ⅓ cup) powdered sugar
  • 6-7 tbsp egg white
  • 1 tsp almond extract

To Make 4-6 Single Serving "Æblekage med Makroner" Desserts:

  • 120 ml (1/2 cup) heavy cream, whipped (add sugar if you want!)
  • 16 crushed makroner cookies
  • 225 grams (3/4 cup) unsweetened apple sauce
  • 1 portion kagecreme (optional!)
  • Process: simply divide ingredients among 4 single serving glasses - we like to layer kagecreme, makroner, applesauce, makroner, and then some whipped cream on top!

Instructions

  • Preheat oven to 300 degrees F (about 150 degrees C).
  • Measure out almond flour and powdered sugar in a mixing bowl or a food processor.

  • Add wet ingredients (egg whites and almond extract) as well. Mix together (by hand or using the food processor) until you have a sticky and pipe-able dough. You can add more egg white if needed!

  • Add dough to a piping bag and pipe out 1-inch round cookies. You can use some water to flatten the points down and create a rounder shape!

  • Bake for about 25-30 mins until the cookies are almost solid (they will harden as they cool). The final texture should be crunchy and not soft! We've found that baking on a convection (fan) setting dries out the cookies much better. If you are using a regular oven, you may have to add around 10 minutes to the cooking time. If you do end up taking the cookies out too early, you will still be left with a delicious cookie, it may just be a bit soft in the center!
