As the beautiful spring weather rolls in, we’re always looking for recipes that are easy to make and incorporate some fresh fruit! This cake is undoubtedly one of our favorites. It’s a coconut and apple cake, and a slice of this outside on a sunny day is just a dream come true. The coconut gives it a unique texture and the occasional bite of apple gives you that much needed zing of freshness. It’s sweet, moist, and fluffy, and best of all, it’s so easy to make!

But is it Scandinavian…? Good question! Probably not, but hey, we based this recipe on one we found in an old Danish cookbook, so we’re using this loophole (again!) to get around the parameters we set for ourselves (lol). Seriously, though, we don’t plan on NOT sharing amazing recipes just because they’re not traditional Scandinavian foods. We Danes love cake, and that’s enough justification 🙂

This recipe is easy as pie. Or cake, I guess…Anyway, you really just need to whip up the eggs and sugar for a while, until they’ve doubled or tripled in size. Then, the rest is simple – combine everything and bake! Don’t forget to arrange your apple slices nicely, it really makes a difference. We hope you try it and enjoy it! Leave a comment or a rating 🙂

IMPORTANT NOTE:

We always bake using a digital scale and the metric system (grams and milliliters). We can’t promise that our cup measurements will be as accurate! Additionally, we bake and develop our recipes in a convection (fan) oven.

Ingredients
  

CAKE BATTER

  • 3 large eggs (room temperature)
  • 150 grams (3/4 cup) sugar
  • 1 tsp vanilla extract
  • 150 grams (1 1/4 cup) all-purpose flour (plus an extra tbsp to coat the apple)
  • 150 grams (1 cup) unsweetened coconut flakes
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 175 ml (3/4 cup) vegetable oil
  • 175 ml (3/4 cup) milk
  • 1 apple, cubed

TOPPING

  • 1 apple, sliced thinly
  • Extra coconut flakes
  • Sugar (turbinado would be great but regular sugar works too!)

Instructions
 

  • Preheat oven to 350 F (175 C). Line a cake tin with parchment paper and butter/oil/non-stick spray.
  • Beat eggs and granulated sugar together until light in color and doubled or tripled in size. Use a stand mixer with a whisk attachment, or an electric hand mixer – it will be more difficult to whisk by hand, but it can be done!

  • Add vanilla extract and give it another few whisks to combine.
  • Mix together the dry ingredients (flour, coconut, baking powder, salt) in a separate bowl.
  • Mix together the wet ingredients (vegetable oil and milk) in a separate bowl.
  • Add half of the dry ingredients to the egg and sugar mixture and mix together until just incorporated. Then add half of your wet ingredients and mix until incorporated. Add the remaining dry ingredients, mix, then add the remaining wet ingredients. Once incorporated, give the mixture a few folds with a spatula to make sure everything from the bottom has been mixed.

  • Next, toss your cubed apple with a tbsp of flour, then add to the cake mix.
  • Pour this into your cake tin, arrange the thinly sliced apple carefully on top in a circular pattern, and top with a sprinkle of sugar and coconut flakes.

  • Bake for 35-40 minutes or until a cake tester/skewer/knife comes out clean. Enjoy!

      Hi! We used a 10″ springform for this for easy removal, but you can also use a 9″ cake pan and just make sure to double check if it is done at the same time as the recipe states – it could need a little bit more time!
