When we aren’t working on developing new recipes for Skandibaking, we still love to cook and bake! We wanted to share some of the other recipes we have been making this month, from blogs, Tiktok creators, and our favorite cookbooks! Check them out below, and we hope you get some inspiration to get cooking or baking this autumn!
Snickerdoodles from BBC Good Food
This recipe makes snickerdoodles that are the perfect texture: a bit crisp around the edges but super soft and pillowy in the center! As I (Emma) am currently living in the UK, I made these to introduce British friends to this delicious cookie, which, in my opinion, is perfect for the autumn season. They went down a treat and writing this is actually inspiring me to make them again! And don’t leave out or substitute the cream of tartar – it makes all the difference and gives them a great tangy flavor!
French Onion Mac & Cheese from Comfort MOB Cookbook
This is such a fun recipe for a weekend night where you want comfort food and have some time on your hands! It involves caramelizing onions with some white wine and thyme, then making a delicious and creamy cheese sauce, and finally baking this in the oven with pasta. Serve alongside some roasted broccoli or asparagus or any other veggies that you like. This made an enormous portion that lasted me several meals, and I can promise that the leftovers tasted just as good as the first day! MOB’s cookbooks, and this one in particular, are so reliable for hearty dinner recipes with reasonably simple ingredients.
Tuscan Tortellini Soup from @britacooks on TikTok
When the cold weather hits, I immediately start to crave soup. To be honest, I could eat any type of soup, but I would say that I probably prefer a heartier one with plenty of veggies, protein, and either rice or pasta, so that it really feels like a meal. This tortellini soup is the perfect balance of all these things! I use @britacooks TikTok recipe for inspiration and add whatever I have on hand. I am a tomato lover, so I also like adding fresh tomatoes to this recipe to give it a bit of added acidity. If you have never tried Tuscan tortellini soup, make it! It is the ultimate autumn and winter comfort food and could not get any easier to make at home.
Peppercorn and Red Chilli Chicken Curry from Chetna’s Healthy Indian Cookbook
I love Indian food – it’s probably my favorite cuisine (if I had to choose)! It can sometimes seem a bit daunting to cook at home without access to the right ingredients, but there are so many great cookbooks out there to help you get started. Chetna Makan’s Healthy Indian is a great addition to your cookbook collection because she offers so many different dishes (not just curries!) and all of them are well-balanced and super tasty. This peppercorn and red chilli chicken curry is a prime example, as it really isn’t as difficult to make as it seems at first glance. The final result is one of the best curries I have ever made. No doubt it will become a favorite go-to recipe of mine soon enough!
Bolognese from Essentials of Classic Italian Cooking by Marcella Hazan
I can’t think of anything more perfect for autumn than a comforting bowl of pasta – and nothing quite hits the spot like a classic Bolognese. It’s perfectly savory and while it may take a little bit of time and effort, it’s 100% worth it. I highly recommend the Essentials of Classic Italian Cooking book by Marcella Hazan, as it has everything you could possibly want to know about Italian cooking, and then some. There are almost five hundred recipes in this book, so there’s always something new to try!
