Snacking Season
We’re coming up fast to Christmas and New Year’s, which is the peak of snacking season. While the main meals still steal the show in our family, I know that for many people, appetizers (or hors d’oeuvres, if you’re feeling fancy) are a very important part of the holidays. And why shouldn’t they be? There’s something special about ruining your appetite by eating too many little mini foods before the main meal. Plus, there’s not much I love more than making a charcuterie board – it’s so much fun to arrange everything! So today, we wanted to share a recipe that you could use this holiday season for your appetizers or snacks, whether it’s for Christmas Eve, New Year’s Day, or any other time.
Today’s Recipe
You might not know this, but it’s super easy to make crackers at home. Of course, it’s easier (in some ways) to buy them, but by making them at home you can save a bit of money and add whatever flavors you like to the crackers themselves. You can make a few different kinds, add seasonings or cheese, and even cut them into different shapes. Make them ahead of time and you’ll have them on hand to whip out at any time during the holidays with a bit of cheese or a dip on the side (we have a delicious herb and onion dip recipe, linked here!). Or, use them in a charcuterie board, and you’ll definitely impress your guests. Plus, they just taste so delicious and have a great crispy texture that makes the small extra effort to make them at home well worth it.
Knækbrød-inspired
This cracker recipe is inspired by our knækbrød recipe that we shared a couple of years ago now. It is still one of our favorite options for seeded crackers, as they have so much flavor and the seeds add an amazing texture too. However, for this recipe, we wanted to make the process of making homemade crackers even easier, so you don’t need to go out and hunt for seeds. Instead, this recipe uses simple ingredients that yield a wonderful result. Of course, if you do like certain seeds or want to use rye flour, feel free to substitute these things as you see fit. Both recipes are a winner, so just make whichever you prefer!
Ingredients
Again, this recipe uses super simple ingredients, which is perfect for the holidays when we tend to be busy and don’t want to have to add niche ingredients to our shopping list. All you need is all-purpose flour, whole wheat flour, salt, baking powder, water, and olive oil. Cracker recipes are generally forgiving when it comes to substitutions, so if there’s another flour you want to use or oil, feel free to do so. One thing I wouldn’t change is the baking powder, because it gives the crackers a nice flaky texture, and the salt, as it will otherwise be too bland. You can also add things like garlic powder, rosemary, thyme, or even some grated cheese if you want to add more flavor!
Instructions
It’s up to you how complex you want to make the process of making these crackers. First, combine the dough – there’s no need to knead it, just mix until combined. Then, you should roll out the dough until quite thin. Now, you can either cut out shapes if you have cookie cutters or just slice the dough into rectangles with a knife. Either way, you’ll get the same taste and texture as the final result, so don’t make it harder on yourself if you don’t want to! Bake these in batches for even browning and let them cool and harden up on a wire cooling rack. Serve alongside a dip (we just published a new dip recipe here!), as part of a charcuterie board, or just to snack on throughout the week. Enjoy!
Easy and Crispy Wheat Crackers
Ingredients
- 165 grams all purpose flour (plus a little extra for rolling the dough out)
- 110 grams whole wheat flour
- 1/2 tsp salt
- 1 tsp baking powder
- 120 milliliters water
- 120 milliliters olive oil
- Flaky salt for sprinkling on top (optional)
Instructions
- Preheat the oven to 390F (200C).
- Combine dry ingredients (flour, whole wheat flour, salt, baking powder) in a medium bowl and mix to evenly combine.
- Add in water and oil.
- Start stirring, then gently knead together until there are no dry spots. We just want to combine the dough, so as soon as it comes together, stop kneading!
- Flour a clean work surface and start rolling out the dough with a rolling pin.
- Try to get the dough quite thin (between 1/16" and 1/8") so they are crispy and take less time to bake.
- Cut out circles of dough (we cut ours to circles about 2" in diameter, using a glass to cut them out!)
- Transfer the dough circles to a baking sheet lined with parchment paper. We fit about 25 on each baking sheet.
- Roll out the scraps of the dough again to fill another baking sheet. We got about 50 crackers before we discarded the scraps that became too tough to roll out. You can keep going if your dough cooperates!
- When the crackers are on the baking sheet, prick each with a fork three times to help them stay even in the oven. Sprinkle the tops with salt if you would like.
- Bake for 10-15 minutes. They should turn slightly golden, and fully crisp up as they cool. It's a large baking window but it very much depends on your oven; if in doubt, leave them in another few minutes!
- Transfer to a cooling rack to fully cool. Enjoy with your favorite dip, with cheese, or just as a snack on their own!
