Preheat the oven to 390F (200C).
Combine dry ingredients (flour, whole wheat flour, salt, baking powder) in a medium bowl and mix to evenly combine.
Add in water and oil.
Start stirring, then gently knead together until there are no dry spots. We just want to combine the dough, so as soon as it comes together, stop kneading!
Flour a clean work surface and start rolling out the dough with a rolling pin.
Try to get the dough quite thin (between 1/16" and 1/8") so they are crispy and take less time to bake.
Cut out circles of dough (we cut ours to circles about 2" in diameter, using a glass to cut them out!)
Transfer the dough circles to a baking sheet lined with parchment paper. We fit about 25 on each baking sheet.
Roll out the scraps of the dough again to fill another baking sheet. We got about 50 crackers before we discarded the scraps that became too tough to roll out. You can keep going if your dough cooperates!
When the crackers are on the baking sheet, prick each with a fork three times to help them stay even in the oven. Sprinkle the tops with salt if you would like.
Bake for 10-15 minutes. They should turn slightly golden, and fully crisp up as they cool. It's a large baking window but it very much depends on your oven; if in doubt, leave them in another few minutes!
Transfer to a cooling rack to fully cool. Enjoy with your favorite dip, with cheese, or just as a snack on their own!
