Long overdue update
It’s been a while since our last round-up of all the things we’ve been loving. In fact, our last one was in May! But if you follow us over on social media, you’ll know that we started doing some weekly photo round-ups there instead. So, needless to say, this is a very long overdue update here on the blog. If you’re new to this, this is a series where we share what we’ve been up to outside of Skandibaking, which often includes eating, cooking, baking, exploring, reading, new experiences, visiting new places, and so on. Usually, we focus on the last week, but to be honest, this post is definitely a round-up of several weeks’ worth of photos. We love having the chance to share some more of our lives outside of the blog that might inspire you, like autumn things to do, which feature heavily in today’s post.
1. Autumn things to do: Apple baking!
It’s no surprise that we’ve been focusing on autumn baking, especially with apples, as they’re in season and the perfect autumn ingredient. You can see this in our most recent recipes, as we’ve shared how you can make apple butter at home, apple butter thumbprint cookies, and apple streusel muffins. And we’ve got even more autumn recipes coming your way! We’ve recently been making more videos over on YouTube too, where you can now find a full-length video tutorial on how to make æblesnegle, or apple-cinnamon rolls.
2. Easy and nutritious breakfasts
In case you didn’t know, we have a new Skandibaker in the family! Sofie had a baby over the summer, so things have been very busy. Hence why making breakfasts ahead of time comes in very handy. The Kodiak cakes muffin and pancake mixes have been especially useful to speed up the process and have snacks and breakfast on hand for the whole week. Smoothie bowls are also a fantastic option because they’re delicious and can be very nutritious! I love the HEB triple chocolate granola, so can highly recommend that.
3. Walks along the canals in Birmingham
Here in Birmingham in the UK, where Emma lives, autumn has been beautiful, as always. It has also been a bit rainy and dreary, as always. But that’s a big part of the charm! I live near the canals here in the city, so for me, it’s usually a walk along the canals instead of a walk in a nearby park. The canals here lead you wherever you want to go, whether it’s into the center to shop or go out to eat, out to the suburbs to go explore a different neighborhood, or just a pretty stroll to get some steps in. Taking a walk along the canals is definitely one of my favorite autumn things to do.
4. Trying out new snacks and drinks
Are any of you a sucker for new items from big brands? I know I am. And it’s not because I always expect them to be good – I definitely expect the opposite – but I just love trying them! You never know how long they’ll actually be around, because it’s not common that a new flavor stays in stock like the original. Plus, here in the UK, we don’t have the range of flavors of different products like the US does…the Oreo selection is tiny! So I always pick up new flavors of products if I find them interesting or intriguing. Recently, I tried the new Lindt Lindor pistachio version, which was so delicious. I also tried the Oreo Coke, which was not as much up my street, so I wouldn’t buy it again. But you should try it if you want to, and if you like cream soda.
5. Chinese and Greek food – two of our favorites!
Finally, I recently enjoyed some really delicious Chinese and Greek food here in Birmingham – two of my favorite cuisines. While the Chinese food certainly wasn’t authentic and was more British Chinese, it still managed to hit the spot and fulfill the craving I had for Chinese food. The Greek food was also absolutely delicious, although I’d like to go back to the restaurant and branch out to try a few more dishes than just the gyros and the dips. These are two cuisines where we can be pretty critical, since we used to live in Greece when we were kids and I (Emma) studied in Beijing for about seven months in college, so I have high standards for good Chinese food. Nonetheless, sometimes you just want a good meal and these were definitely tasty!
