New Year’s Resolutions

It’s January, and for many people that means attempting to start the New Year out with some changes in eating or drinking habits. While they may not always last, these can be a fun way to challenge ourselves and open our eyes up to new recipes. For me, for example, I am doing vegetarian January because I want to save some money and try cooking with different ingredients, such as beans and lentils. Other people like to do dry January, where they give up alcohol, or Veganuary, where they eat vegan for a month. But even if you are not doing these this month, it can’t hurt to incorporate more plant-based dishes into your diet. So, today’s blog post rounds up some of our favorite vegetarian and vegan recipes from our blog – enjoy!

Bread & Rolls

Bread is one of our recipe categories that best fits into vegetarian and vegan diets. The recipes below are all vegetarian and very simple to make vegan. Just substitute plant milk for cow’s milk if the recipe calls for it and vegan butter for regular butter. If you don’t eat honey, you can always use another sweetener such as maple syrup or agave instead. Here are two of our favorite recipes!

Sigteboller (Sifted Rye Bread Rolls)
These sifted rye rolls are amazingly soft and fluffy, with a great rye flavor! Eat them plain with tandsmør (a thick layer of butter) or use them for sandwiches or burgers!

Landbrød (Country Bread)
This artisanal and easy-to-make country bread is absolutely delicious as a part of a sandwich, a base for garlic bread or bruschetta, or just smeared with butter! However you eat it, it is fluffy and flavorful!

Savory

While a lot of Scandinavian recipes are based around meat, especially pork, there are some meatless dishes that are hidden gems! With most of our recipes, unless they are entirely meat-centered, you can usually try substituting anything for the plant-based option. For example, if a soup recipe calls for added cream, add a vegan alternative or simply omit it entirely. These two are super delicious options so we hope you give them a try.

Cakes

Unlike bread, cake can be a little bit more challenging to veganize. Luckily, they are all vegetarian! Our æblekage recipe itself is not vegan but we have a vegan version that you can make that is noted in the recipe – see the link below!

Cookies

The most difficult thing to replace in cookies is usually eggs, but we have two recipes that completely avoid this dilemma! Just use vegan butter instead of regular butter and you are all set. If you are vegetarian, you can check under our “cookies” category for more recipes – they are all vegetarian-friendly!

These buttery shortbread cookies are so rich and delicious, and would make a great addition to a cookie box gift. Or, you can just enjoy them yourself with a cup of coffee!

The tartness of the jam in these "raspberry caves" creates the perfect balance with the sweetness of the cookie. They also have an amazingly soft and crumbly texture from the addition of cornstarch!
