Brunching with Friends & Family
As the weather starts to warm up, it is the perfect opportunity to host a delicious brunch with friends or family. There is nothing better than sharing delicious food and drink with our loved ones! And luckily, longer spring and summer days give us the chance to host more events and enjoy more time together outside. In today’s blog post, we wanted to share some Skandibaking recipes that would be a delicious addition to a breakfast or brunch table. Of course, this is a baking blog, so we will be sharing baked goods, but rest assured that we love savory brunch dishes as well. A great brunch table has a nice balance of both, for the lovers of savory and sweet dishes, or those that, like us, love both. Hjertevafler
These are such a cute and beautiful option for a brunch table. Waffles are always a good choice, because they are so versatile and people can top them with whatever they like. Some people might enjoy some fresh berries and whipped cream, while others might like some banana and melted chocolate. Some may even prefer the very American route of adding butter, maple syrup, and a bit of bacon (delicious, if you ask me). So, there really is something there for everyone when it comes to serving waffles! Plus, if you have the heart-shaped waffle iron (linked in the recipe post), they turn out so cute and dainty. We can promise that they will be an absolute hit!
Pandekager
Danish pancakes are basically the same as French crepes, although a bit crispier around the edges and with added cardamom for a lovely and fragrant flavor. These, like the waffles, are also customizable and people can add their preferred toppings. We love them rolled up with a bit of raspberry jam in the middle, or just a squeeze of lemon and sprinkle of sugar. You really can’t go wrong with however you choose to eat them! Of course, these can be a bit of a project to make for a bigger group of people, so just make sure you have multiple pans going at once. Delicious!
Chokoladeboller
We know these don’t exactly compare to the french pain au chocolat, a delicious breakfast pastry, but they are slightly reminiscent – and they are definitely easier to make from scratch for a gathering! Soft and fluffy rolls with bits of chocolate throughout will certainly be a hit for any guests with a sweet tooth! We usually just enjoy these rolls with some butter, but you can add jam too if you want to!
Kanelstang
This kanelstang is a great way to make a pastry that people can share, as it isn’t always worth the effort to make individual portions for everyone. And when it comes to sharing, bigger pastries are always the way to go! This cinnamon pastry is basically a larger version of a cinnamon bun that you can slice up and distribute to your guests. We don’t top it with icing in our recipe, but if that is something that you want to do, feel free! I think it would definitely steal the show, and people would be asking you for the recipe in no time.
Landbrød
We’ve included this bread recipe in quite a few roundups at this point, but it’s for a good reason – it’s so simple and easy to make and the payoff is amazing! While it does require a little extra rising time, it’s very hands off since it doesn’t require any kneading – so you can prep other dishes while this rises! We love to eat this with a hefty smear of butter, but you can use it as a vehicle for other brunch faves – poached eggs, smoked salmon or avocado!
