Today’s Post
It has been a while since our last blog post in this series, which we posted in the spring. Now that it’s nearly the end of summer, we thought it was time for a recap of our favorite recipes from other creators that we have been loving. Honestly, when I love a recipe, I make it on repeat, so these are tried and tested! And I will warn you – it has been a rainy summer here in the UK, so my choices (Emma’s) are not particularly summery. We love sharing recipes from other blogs and cookbooks on here, and we hope you give them a try!

Detroit-style Pizza from King Arthur Baking
I must admit, I am not the most diligent follower of recipes, as I prefer to adjust things as I go. However, if I am ever making something for the first time, I do try to do some research so I don’t screw things up too badly. When I wanted to make a Detroit-style pizza, I found this King Arthur recipe and have used it ever since! While I don’t always go all the way in terms of sticking to the Detroit style (I like my sauce evenly spread and under the cheese, sorry), this is an amazing base recipe. If you like thick Sicilian-style pizza, then definitely try this! It also works with whatever toppings you have on hand, which makes it a great recipe to make on a regular basis.
New York Style Bagels from Sophisticated Gourmet
Since I moved to the UK, it is so difficult to find a good bagel. The storebought ones do not have any chewiness to them, and the ones you get in cafes or bakeries typically aren’t big enough, like the American ones are. For me, a delicious bagel is chewy on the outside but bready on the inside. It should be so big that it barely has a hole in the middle. I like mine with seeds and salt on top, and when eating them, I always top each half with plain/scallion cream cheese, sliced tomato, salt and pepper. Because I crave bagels so often, I have started making a batch on Sundays so that I have breakfast for the week ahead. This recipe produces wonderful ones, and you can customize it with the addition of seeds or different types of flour. If you like bagels, definitely give it a go!
Satay Sweet Potato Curry from Deliciously Ella
This cookbook has been featured many times on our blog before, and that’s because it’s a great one. Not only are the dishes delicious and reasonably easy to make, but they are also entirely vegan. I do sometimes add the occasional non-vegan product because I am not vegan and I use what I have, but these recipes are truly phenomenal. This dish in particular is a go-to for me, as it is so hearty and flavorful. If you like peanut-based curries or noodle dishes, this is the one for you. You just can’t go wrong with this book, and this is probably one of my favorite recipes in it!
Coconut Lime Chicken
If you’re looking for something quick and easy that you can make on a weeknight when you’re not looking to put in too much effort, but still have a great result, try out this coconut lime chicken recipe! We made this recently for dinner, and it really does come together quickly! The chicken stays nice and tender in the sauce, and served alongside some rice, it’s the perfect satisfying dinner! And it helps that it’s cooked in one pan, so that means less dishes!
Summer Rolls
I don’t know about you all, but we definitely get a lot of dinner recipe inspiration from Tiktok! We recently saw Cassie of @cassyeungmoney making summer rolls, and they looked so good we had to make them ourselves! They are such a versatile meal, as you can really customize the rolls with different vegetables that you have on hand. They’re super refreshing if you are experiencing that summer heat! We’ve eaten them with shrimp or tofu before, and sometimes we also add in red cabbage and sliced jalapenos. Cassie makes her own dipping sauce, but we’ve also been able to buy peanut sauce at the grocery store for a quicker version! Check out her video below for her summer roll recipe:
