Today, we wanted to share with you another edition of recipes we are using from other blogs and cooks! Our last one was back in April (see post here). Since it’s the end of August, we thought we would round up some recipes we’ve been using this month! They range from sweet to savory and summery to hearty and warm. Check them out and try them out if you like – they are all Skandibaking-approved!
Lentil Bolognese from Rainbow Plant Life’s blog
This vegan bolognese is made with lentils! While the addition of red wine, vegetable broth, walnuts, and balsamic vinegar gives it a savoriness that is similar to a meat sauce, I won’t claim that it tastes exactly like a meat bolognese. However, it is a cheaper and healthier alternative that is super easy to make and so delicious it its own way. It also makes a big batch of sauce that you can freeze and save for future dinners where you may be short on time or ingredients to make something from scratch!
Brown Butter Oatmeal Raisin Cookies from Broma Bakery
These cookies are so soft and delicious and perfect to satisfy your cookie cravings! And if you claim that raisins don’t belong in cookies – grow up! They certainly do, and I also think that oats are an underrated ingredient in cookies. They add a nutty and unique flavor that greatly improve the taste as well as the texture of cookies. Anyway, this recipe is pretty foolproof, as are most of Broma Bakery’s recipes! I love to make this cookie dough in big batches and freeze it, then just bake my cookies from frozen whenever I want one!
Apricot Cherry Clafoutis from The Bojon Gourmet
When I tell you that this is the best summer dessert, that is not an exaggeration. First of all, if you make it with cherries and/or apricots like the recipe calls for, you will be absolutely blown away by the taste. Then, the texture is to die for, especially if you like custard! It’s almost like a compact and dense eggy custard studded with fruit and a few flaked almonds. Finally, it’s super customizable. I sometimes substitute Kefir or yogurt in for some of the half and half that the recipe calls for and usually use whatever milk I have. I have made it with so many different fruits (blueberries, strawberries, peaches, apricots, apples, cherries) and it turns out delicious every single time. Make this – it will quickly turn into a favorite!
Spanakopita from The Mediterranean Dish’s blog
We actually spent 3 years of our childhood living in Athens, Greece, so spanakopita is a dish that is very close to our hearts. Nothing will ever compare to the authentic spanakopita you can buy in Greece, but this is a recipe that is reasonably easy and turns out delicious! It’s simple enough to make for a weeknight dinner, but it’s also impressive to make for a dinner party or large group dinner. We love cooking up a big Greek dinner when our family is gathered, which has to include spanakopita along with dolmades, tzatziki, souvlaki, pita, and pastitsio or moussaka.
Tomato Tart from The Complete Vegetarian Cookbook
If you’re looking for a hearty dish that doesn’t include meat, try out this tomato tart from America’s test kitchen! The crust is buttery and flaky, and the cheesy layer of ricotta and parmesan adds a richness that complements the sweet and tart flavor of the tomatoes. This is a great cookbook to have in your arsenal if you’re looking to expand on your vegetarian cooking!
