It’s hard to believe that two years ago we were in the middle of a pandemic and decided to start this blog. Since we are celebrating two years of Skandibaking this week, I thought I would take the chance to reflect on the past two years in today’s blog post.
The decision to create this blog came out of a lot of boredom and newly rediscovered love for baking! In the months leading up to the launch of Skandibaking in September of 2020, Sofie and I spent a lot of time baking over FaceTime. Eventually, we felt that we wanted a project to work on related to baking. And Skandibaking was born!
We decided on running a blog together since it combines many of the things we both love and also provides a space for each of us to showcase our strengths in different areas. For example, we both love baking and developing recipes, especially when we can get creative and inventive with our baked goods. I am much better at working with bread dough or anything with yeast, while Sofie is good at technical things and beautiful desserts. Then, in terms of the blog work, Sofie is incredibly talented at photography, videography, photo and video editing, and website design, so every single aesthetic piece of our blog is thanks to her. When it comes to all those things, I just do as I am told and I am happy to because she always knows what she is doing!
On the other hand, I love writing, which is why I have the responsibility of getting words down on every page of our blog and every post on our social media accounts. It can be difficult to write a blog post when you aren’t in the mood but luckily, I’ve had two years to get used to it and it feels more like a routine now. I am also a bit less shy than Sofie, so I am happy to do voiceovers and things like that for our social media. However, we are both trying to get our faces out there a bit more to create a more personal connection with our followers! Check out one of our recent YouTube videos below:
Since 2020, we have achieved many things, but it has not come without its challenges. Social media, for one. With the competition of thousands and thousands of baking and food accounts trying to go viral and make a career out of food blogging, we have certainly struggled to grow a significant following. However, this is something we were prepared for, and we knew that with consistency and hard work, we would eventually grow. Lucky for us, this has started happening over the past few months and we hope it continues in an upward trajectory! Video content is certainly the future, and as we get more and more into it, we hope that the social media algorithms will be kind to us 🙂
Another challenge has been living in different cities for the past two years, and then different countries for the past year and the foreseeable future. This means juggling different time zones where we are at completely different points in our day but still trying to plan out our content. It means a lot of communication to ensure that blog posts are written so that Sofie can add photos, and that videos are ready so that I can write a caption for our social media platforms. The nice thing is that we both get to be involved in almost every single part of Skandibaking! It’s hard work, but so rewarding when we get to see the final products, whether that’s our website or a new video on Instagram or TikTok.
The best part of all of this, though, is everyone who tries out our recipes! We love seeing photos online or getting comments on our recipes, even if it sometimes doesn’t turn out perfectly. We love chatting with you all in our Instagram DMs or comments on TikTok, by email, or even in the comments on this website. Thank you for following along for the past two years. Hopefully, with a bit of luck and some more hard work, there will be many more years to come!
Happy 2nd Anniversary! Or should I say tillykke med andet jubilaeum?! I fell in love with Denmark (and it’s pastries!) on a trip to Copenhagen in 2019. My friend and I even took a Danish baking class while we were there! Every time your posts pop into my inbox, it’s like a little dose of hygge! Keep up the amazing work 🙂 – Tak, Rebecca (@my1000miles)
Tusind tak! We appreciate it and are so grateful to you for following along <3 And love seeing your baking pictures on Instagram too!! Best wishes 🙂
