Welcoming February!
It is officially February, which means it is almost time for a holiday that many people hate and many people love…Valentine’s Day! Honestly, the hype and commercialism surrounding this day is very overwhelming, so it is completely understandable why some people do not enjoy it at all. Personally, I have never seen it as an important holiday, as there are so many much better holidays to celebrate throughout the year! However, it is always nice to celebrate love, especially in the dead of winter (at least where we are!), which can feel so gloomy and isolating. And what better way to show someone you love them, whether it is a romantic partner, family member, or a friend, than with home-cooked food! So, without further ado, here is a V-Day menu we have compiled of our recipes that we hope inspires you for the upcoming holiday.
Drink: Lingonberry Aquavit Soda
Before digging into a hearty and delicious meal, it is always fun to start with a little aperitif. Of course, we had to choose the pink one, since it is a holiday all about love! But, this drink is also seriously refreshing and works so wonderfully as a precursor to the rest of the rich and savory dishes we have chosen in our lineup. The lemon and lingonberry cut beautifully through the sharpness of the aquavit and you are left with a very fresh flavor. You really can’t go wrong with this cocktail!
Starter: Potato and Leek Soup
Soup is one of the best starters out there, especially when you have a whole meal to prepare yourself! Reason 1: it’s easy to make in advance and to heat up when you are ready to serve dinner. 2: it isn’t too filling, so it starts the meal out but doesn’t leave guests too full to carry on eating. 3: it can be a vessel for lots of vegetables, so everyone is still getting a balanced meal at the end of the night. I rest my case. This soup is a great choice – would highly recommend!
Main Dish: Andesteg
This dish may be a Christmas dinner staple in Danish families, but there is no reason why you can’t make it for other occasions as well. This is a phenomenal choice if you want to impress someone (as many of us may want to do on Valentine’s Day). It looks like it takes plenty of skill and effort to make, but it is actually a very simple process. The end result is so flavorful and delicious, you just can’t go wrong. The perfect choice for Feb 14th!
Side: Hasselbackspotatis
These potatoes are one of our favorite ways to make a somewhat boring vegetable (sorry!) seem a bit fancier. It also gives the potatoes a great texture, as they get a bit crispy on top but are still wonderfully fluffy underneath. They pair really nicely with the main dish, and you can even make a gravy on the side to pour over the potatoes or the duck. Seriously, a simple but very effective way to prepare potatoes!
Dessert: Chocolate Cake
Now, of course we had to choose something with chocolate in it for Valentine’s Day dessert. How could we not? We have tons of other options on the blog if chocolate is not your favorite, of course, so you can always check those out. This is a super fluffy and easy to put together chocolate cake, which is then covered in delicious and silky chocolate ganache. You can decorate it with some heart sprinkles, cut up fruit, or whatever you like, but we can promise that the end result will be absolutely fantastic. Yum!
