Summer, Sun, and Lots of Good Food
It’s already June, which means summer is here! And there’s nothing like a bit of sunshine to make you feel like throwing a barbecue with family and friends, enjoying good food and drinks along with Vitamin D. Long summer days mean there’s plenty of time and daylight to celebrate special occasions, like birthdays or anniversaries. But you also might just want to make the most of a weekend and invite people over to hang out. Either way, if you’re hosting, you’ll probably want to provide some food for your guests. Snack/Appetizer: Crackers and Dip
There’s no better snack for a barbecue than a good dip and some crackers to go with it. Our recipes for flaky and delicious crackers and a tangy and creamy onion and herb dip are simple but very yummy. Plus, you don’t have to make the crackers homemade! You can always buy them at the store or even get a few bags of chips to go with the dip. Delicious and easy to share with a group.
Main Dish: Lammefrikadeller
Now, you may already have something else in mind as the main dish for a barbecue, such as burgers, chicken, or ribs, but these lamb meatballs are a fun alternative. You can cook them up as meatballs and serve them with pita, tzatziki, cucumber, tomato, red onion, and lettuce for a Greek twist. Or make them into burger patties and make lamb burgers! You can’t go wrong with this recipe – sure to be a hit.
Side: Creamy Potato Salad
We know that not everyone loves mayo in their potato salad, so our version uses sour cream, which combines with fresh herbs and hearty potato to create a winning combination. The dish is simultaneously refreshing and filling, making it perfect for a summer barbecue, especially as a side to a rich meat dish. We also have a version without anything creamy in it, which you can make if you prefer. We hope you try it out!
Dessert 1: Strawberry Trifle
Next comes the dessert, our favorite part! We have to share two recipes because you always need options for a big gathering of people. This first one is great because you can find a few shortcuts to make it easier, like buying storebought fruit compote and cookies. Plus, you can make a big version of the trifle and people can serve themselves, making it super convenient for everyone.
Dessert 2: Lemon Bars
The second dessert is just so refreshing for summer, especially after a big meal like a barbecue. These lemon bars have a super buttery base with a tangy curd on top that has just the right amount of sweetness. They’re easy to make ahead of time too, and store in the fridge until ready to serve. Yum!
