Our Passion for Cooking
In addition to running this blog and Skandibaking’s social media, Sofie and I also both work other jobs, so we tend to be super busy most of the time. But we absolutely love to cook and bake, and we love to do this even outside of developing recipes for Skandibaking. Food and cooking are something we grew up surrounded by, as our parents took turns cooking dinner for the two of us and our two brothers, and we sat down to eat dinner all together every night. We would often help out in the kitchen and learned a lot by doing so. Our passion for cooking, baking, and eating is something shared by our whole family, and that makes it even more special to us!
Exploring Recipes
For both of us, there is nothing better than finishing a day of work and cooking a healthy, hearty meal, which is something we find very relaxing. But, of course, there are those days where stress levels are high and a quick meal is the best way to end the day. Then, on weekends when we aren’t busy or working on our own recipes, we love to try out baking recipes from other food blogs and cookbooks. Not only does it usually produce a delicious outcome, but we also get inspiration and ideas for future Skandibaking recipes! So today, we thought we would share some of the recipes from other people, food blogs, and cookbooks that we have been making and loving this month. 1. Tomato Risotto from Deliciously Ella’s Cookbook
If you like tomatoes, then this recipe is for you! It’s a super creamy and glossy risotto dish with plenty of tomato flavor. Plus, it’s vegan! It’s a risotto, so definitely not the quickest of dishes to make, but the final product makes it completely worth it.
2. Shirodashi Ramen from the Wagamama: Feed Your Soul Cookbook
This is definitely more of a weekend recipe if you’re busy on most weeknights, especially if you want to make your own stock. The ramen noodles and rich broth are topped with barbecue pork belly, a soft-boiled egg, pea shoots, bamboo shoots, and green onion. It’s so delicious and worth the effort! You can also make the main ingredients (stock, pork belly) ahead of time and assemble it on a weeknight for a quick meal!
3. Macarons from Preppy Kitchen’s Blog
These French macarons are a notoriously difficult baked good to produce, as so many things can go wrong. But this recipe has all the tips you need, so if you are looking to try your hand at making these delicate cookies, check it out.

4. Dad’s Puttanesca from the “MOB: Comfort” Cookbook
This is the simplest recipe on this list by a mile! Ingredients include pantry staples like anchovies, garlic, capers, tinned tomatoes, olives, and spaghetti. All you really need to buy fresh is a bit of parsley (if you want to!) and you’ll easily be able to whip up this dish.

5. Brown Butter Miso Chocolate Chip Cookies from Butternut Bakery’s Blog
Have you ever asked yourself, how can I make a simple chocolate chip cookie recipe even more delicious? Me neither, but even if you didn’t ask for it, this recipe is the answer to that question. The brown butter gives a delicious caramel flavor, while the miso makes them a bit salty and balances out the sweetness of the sugar. Topped with sesame seeds, they are not only picturesque, but potentially the BEST chocolate chip cookie I have ever eaten!
