We may be a baking blog, but that doesn’t stop us from sharing recipes that we love, whether or not they go in the oven. And now that we’ve talked lots about how summer calls for ice cream and cake, we must admit that above all else, it calls for cold drinks! So, today’s recipe is for an elderflower and gin soda. The elderflower is really what makes it summery and somewhat Scandinavian in nature, but there’s also lime juice and gin to add delicious flavor and alcohol 🙂

It doesn’t get any more simple than this drink, which you don’t even have to shake! Simply add ice and all of the ingredients to a glass and stir, and you’re all set! IMPORTANT NOTE:

We always bake using a digital scale and the metric system (grams and milliliters). We can’t promise that our cup measurements will be as accurate! Additionally, we bake and develop our recipes in a convection (fan) oven.

Ingredients
  

  • 1 oz gin
  • 3/4 oz elderflower drink concentrate (or elderflower syrup) *we get our elderflower drink concentrate from IKEA; we also think you could substitute this for an elderflower liqueur!
  • 6 oz club soda
  • 1/2 oz (or to taste) lime juice
  • Ice cubes
  • Lime round for garnishing

Instructions
 

  • Add ice to a glass. Pour in your gin, elderflower drink concentrate, lime juice, and club soda. Stir well to combine. Garnish with a lime round or wedge and enjoy!
