Coping with Summer Heat
We talk about the weather and seasons all the time on this blog, and that’s because we feel like the weather impacts so many things, from our mood to what we want to bake or cook. As you may know, Sofie and I live in very different places at the moment. She moved from Boston to Texas over the summer and I live in Birmingham in the UK. Needless to say, because of our locations, we are having very different summers in terms of weather. I am experiencing barely any sunshine or heat at all, but plenty of rain, and she is experiencing summer heat to an uncomfortable degree! Anyway, a bit of relief from those searing temperatures is what inspired the creation of today’s recipe. So, if you live in the UK or certain parts of Europe at the minute, you may not relate to this, but luckily we all love a good drink anyway 😊
Today’s Recipe
It may not be the most Scandinavian recipe (or even close to Scandinavian at all), but today we wanted to share a cocktail we recently made that was just too good not to post! At the end of the day, while we mainly develop Scandinavian recipes, we just love to create delicious things. This is a blueberry margarita, which hits the perfect notes of sour and sweet. It looks almost too pretty to drink! We were inspired by a Tiktok creator, @thewhyteelephant, who made a lavender blueberry margarita earlier this summer – we’ve added the video from him below. Feel free to create a different syrup instead of blueberry if that’s something you would prefer, you can substitute a lot of different fruits! And definitely add a salt rim if that’s your vibe. You can also omit the tequila and add soda water instead for a non-alcoholic version.
Making this Marg
Believe it or not, this is not a very challenging recipe. 😂 Simply combine the ingredients with ice and shake in a cocktail shaker. Pour in a glass over ice, garnish (we like a little stack of blueberries or a lime wedge), and serve. The most difficult part is probably the homemade blueberry syrup, which you can replace with something store-bought if needed. However, we think the homemade version is still super simple and yields a better taste! Plus, you can adjust for sweetness, so if you’re looking for a sweeter syrup, then you can add more sugar. For the syrup, just heat the ingredients up until the sugar dissolves and the blueberries burst. Once it turns a pretty purple color, then you’re ready to let it cool before using it in this recipe. Blueberry Margarita
Ingredients
Blueberry Syrup (Yields about 200 milliliters or 6.5- 7 ounces of syrup)
- 225 grams (8 ounces) fresh or frozen blueberries
- 120 milliliters (1/2 cup) water
- 100 grams (1/2 cup) granulated sugar
Margarita
- 1 ounce blueberry syrup (we include instructions to make your own syrup in this recipe, but if you can find storebought, you can use it instead!)
- 1.5 ounces tequila
- 3/4 ounces lime juice
- Ice cubes
Instructions
Blueberry Syrup
- For the blueberry syrup: add blueberries, water, and sugar to a small pot. You can adjust the amounts accordingly for however many drinks you will be making! Place over medium-low heat on the stove.
- Cook for around 10 minutes, stirring occasionally – the sugar should dissolve and the blueberries should be starting to burst, and the liquid should be a nice purple color. You can mash the blueberries if you want to get a little more flavor out of them!
- Turn off the heat and let the syrup cool.
- Strain through a fine mesh sieve into a small bottle or container that you can keep in the fridge. Use the syrup within a week!
Margarita
- Add ice to your shaker.
- Add in blueberry syrup, tequila, and fresh squeezed lime juice.
- Shake well, until the outside of the shaker feels very cold!
- If you would like salt on the rim of your glass, rub a lime wedge around the edge of the glass and dip in salt!
- Add ice cubes to your glass. We use a lowball/rocks glass for this, and it fits one serving perfectly!
- Pour the shaken cocktail into the glass.
- Garnish with a lime slice or lime wedge, and fresh blueberries. We put our blueberries on a martini skewer! Enjoy!
