Recipes For You: Intermediate Bakers

It’s time for another blog post! Today’s is a part of our “Recipes for You” series, where we try to select some recipes that you can make depending on your baking skill level. We published “Recipes for You: Beginner Bakers” last month, which suggests five simple recipes that require only basic ingredients, tools, and skills. Today, we will tackle the question of what you should bake if you have some more advanced baking skills and a bit of experience. We hope you try out some of the recipes below!

1. Cookies: Franske Vafler

These cookies are called franske vafler, or “French waffles.” It’s unclear why they have been given this name, as they are not reminiscent of any waffle we have ever had! However, they are super crispy and delicious sandwich cookies with an amazing layer of buttercream in the middle. The cookies are made of pie dough and rolled in sugar before they are baked which gives them a uniquely crunchy texture. Franske vafler are a slight step up from a beginner cookie recipe because of the extra steps of making a buttercream frosting and assembling the cookies. But we can promise that the final product makes it all worth it!

2. Cakes: Drømmekage

Drømmekage is one of our absolute favorite cakes to make and it is a Danish classic. The name translates to “dream cake,” which is very accurate (if you ask us), because we certainly see this cake in our dreams! Okay, that was a bit cheesy, but this is a seriously delicious dessert. The vanilla sponge is very fluffy and moist, while the coconut topping is crunchy and sweet. We rank this as an intermediate recipe rather than beginner because you have to take the cake out of the oven a bit early. Then you add the topping and bake it again. This requires a bit of good judgment so that the cake doesn’t collapse! But don’t worry too much, just follow our recipe and you will be able to figure it out, we promise.

3. Bread: Gulerodsbrød

In terms of bread, if you want most recipes to turn out perfectly, it really helps to have previous experience. Bread is probably one of the most challenging baked goods to get right, as there are many factors that can impact the final outcome. If you’re interested in reading some helpful tips, check out our blog post: “Recipes for Success: 5 Tips for Baking Bread.” The beginner recipe that we shared was a very basic dough that required no kneading and only a bit of shaping. This intermediate recipe, however, requires extra ingredients in the dough, kneading, and shaping. But the end result is a fluffy loaf of soft carrot bread or gulerodsbrød, which makes the effort well worth it. This bread is best topped with salted butter – highly recommend!

4. Pastries: Blåbärsbullar

These blåbärsbullar are a small step up from kanelsnegle, which you should make instead if you are a beginner baker. They are filled with a blueberry and butter filling and topped with some kagecreme (vanilla pastry cream) and fresh blueberries. The dough is a yeasted dough with eggs, sugar, and butter, which makes the final pastry amazingly fluffy and soft. To make these, you should have some patience, as you have to make the dough, filling, and topping. They also need to rise twice before baking, so give yourself plenty of time for this recipe. 5. Dinner: Ham and Asparagus Madtærte

A madtærte, or quiche, is one of our favorite dinner recipes to make if we are looking for something somewhat easy but still hearty, filling, and fancy-looking! Making the crust from scratch is an extra step that makes this recipe a bit more involved, but it’s definitely worth it. We love the filling in this recipe – onion, spinach, asparagus, eggs, ham, and cheese – what more could you want? Serve this with a side salad and you’ll be set. The best part is that it sounds so impressive that it’s homemade, but it really only takes an intermediate amount of effort! Which in our eyes makes it the perfect recipe 😉
