Brunkager are a classic Christmas cookie in Denmark. “Brunkager” literally means “brown cakes” or “brown cookies,” but we call them Danish gingerbread cookies.
Kanelsnegle, or cinnamon snails, are a staple of Danish pastry and by far one of our favorite treats of all time. In fact, our first recipe we posted on this website was for kanelsnegle.
This recipe is a follow-up to the classic raspberry roulade recipe we posted recently. As we were making that roulade, we thought, why not change it up a bit?
