These easy, quick, no-bake oat cocoa balls make a great accompaniment to your afternoon cup of coffee! They are also great to give as a gift or as a part of a cookie exchange during the holidays.

Ingredients

  • 113 grams (1 stick) unsalted butter, softened
  • 113 grams (1/2 cup + 1 tbsp) sugar
  • 25 grams (1/4 cup) unsweetened cocoa powder
  • 1 tbsp coffee, cooled to room temperature
  • Pinch of salt
  • 160 grams (about 2 cups) rolled oats
  • Chopped nuts (optional)
  • Coconut flakes (optional)
  • Vanilla extract or vanilla bean paste (optional)

Instructions

  • Combine softened butter, sugar, cocoa powder, coffee, vanilla extract or vanilla bean paste (optional) and salt in a bowl. Mix until a paste forms.

  • Add the oats gradually. You should end up with a dough that holds together and that you can shape into balls.

  • Shape the dough into balls - the size is really up to you! We use our hands for this process so it can get a little messy!

  • Roll the oat balls in coconut flakes or chopped nuts, or anything else you like. Store in the refrigerator. Enjoy!
