As it is officially summer now, we thought it was time to share a list of our recipes that we would deem perfect for the summertime! In these recipes, we have tried to make the most of fresh ingredients to produce simple and delicious dishes that will both look and taste amazing on a table at your next summer gathering. To us, summer flavors are fresh and bright, with lots of fruit and fresh herbs to give amazing color and flavor to our food. Often, the summer can also be hot and make us crave lighter and fresher foods. So while we do love an occasional hot soup or stew no matter the season, they haven’t quite made the cut on this list 😂 We hope these recipes inspire you and give you fresh ideas for the summer ahead!

1. Frugttærte (Fruit Tart)

This is a dessert that we come back to over and over again. It is a very simple recipe that incorporates basic elements: a crust, filling, and topping, but that’s what makes it so versatile. You can incorporate any fruit that you can find that is in season and you can use any filling you like. We love the combination of vanilla pastry cream and fresh berries piled on top of a crisp and buttery crust. It is just the right amount of richness and freshness to make a showstopper perfect for a warm summer evening!

2. Kartoffelsalat (Herb Potato Salad)

Now, we understand that potatoes aren’t exactly the lightest and freshest of foods. However, potato salads are a staple in many different homes around the world, so we have to include our version on this list. We do have a creamy version as well, but we have to say, this is the one we prefer. We use beautiful boiled potatoes that are dressed in fresh herbs, lemon juice, and oil, for the perfect zingy side dish. Put this on your table at your next barbecue and we can promise it will be a hit!

3. Cardamom Ice Cream

Of course, it can’t be a summer-related list without included an ice cream recipe! Understandably, this is not something most of us make at home, since it’s a bit of a process. Our recipe does require an ice cream maker, which is unfortunate but it really does make a difference! This ice cream has the most amazing cardamom flavor, and it’s both creamy and super refreshing. Whether you are eating a bowl of it on its own or scooping it on top of desserts and cakes, you just can’t go wrong.

4. Franske Hotdogs (“French” Hot Dogs)

This is not necessarily a summer time only recipe, but summer to us means breaking out the grill! Burgers and hot dogs are classic American grill food. Next time you’re craving hot dogs, why not try making them with a Scandinavian twist by making Franske Hotdogs! The main difference between a hot dog bun you can find at the grocery store and the Franske hotdog bun is that the bun is hollowed out in the center and the hot dog stuffed inside! People also swear by the dressing that you can get with these on hot dog carts throughout Copenhagen.

5. Fiskefrikadeller (Fishcakes with Remoulade)

Another favorite dish of ours that screams summer is Fiskefrikadeller, or fishcakes! Fresh seafood in the summer is so good, and these fishcakes with fresh herbs served with a delicious homemade remoulade are no exception! We remember going down to the harbor in Denmark and enjoying fiskefrikadeller often in the summer – evenings well spent! You can eat these however you would like, but we love to eat them with bright greens for even more freshness.

These fishcakes are fresh, delicious, and perfect for a summer evening. You can pair them with some of our homemade remoulade sauce, put them in a burger, or eat them however you like!

6. Koldskål & Kammerjunker (Buttermilk Dessert)

It wouldn’t be a Danish summer without koldskål! It may sound a little strange, but it’s basically a buttermilk “soup” that’s lightly sweetened and served with crushed up cookies! We also love to add fresh fruit to ours! This is definitely a dessert that we really miss from Denmark, as you can buy everything you would need for this ready made at the grocery store there. Having our own recipe means we can enjoy it in the US or in the UK as well! It’s the perfect refreshing summer dessert that comes together really quickly. You don’t even need to make the cookies from scratch – you could use any crunchy vanilla cookie that you can find in stores!
