Today’s focus: Scandinavian summer desserts
Summer is here, and there’s nothing better than a warm summer evening spent outside enjoying the long hours of daylight. And maybe you’re lucky enough to be going on vacation or taking a few days off from work. Either way, there’s no better feeling on those summer nights than enjoying dinner followed by a lovely summery dessert. But what constitutes a summer dessert? Well, I’d say anything light and fruity, showcasing the best ripe fruit of the season. So, here’s our list of our 5 favorite Scandinavian summer desserts!
Frugttærte (Fruit Tart)
This tart is made up of a flaky and buttery crust, covered in a silky smooth vanilla pastry cream, and topped with fresh fruit. We like using strawberries, kiwi, and blueberries, but you can use whatever you have! Any fruit that is in season would be absolutely delicious. The best part about a fruit tart is that it’s simple to make, requires minimal baking, and you can decorate it in quite an impressive way. Definitely one to save if you’re planning to bring something delicious to a summer BBQ or party!

Marengsroulade med jordbær (Strawberry Meringue Roulade)
If you’re a fan of pavlova or meringue, this is a must-try for you! It’s basically a pavlova in roulade form. In each spoonful, you get a bit of crunch, a nice fluffy meringue, sharp strawberry compote, and smooth whipped cream – the perfect bite. Fresh and in-season strawberries are the best for this because they provide the most amazing flavor to contrast with the sweet meringue base. This one is just simple summer flavors at their very best, and it just looks stunning when you put it together.

Hindbærmousse (Raspberry Mousse)
This is possibly the easiest Scandinavian summer dessert recipe on this list, so it’s one to try if you’re on the hunt for a quick and light dessert option. We absolutely love raspberries in the summer – they remind us of picking fresh raspberries in the woods in Denmark – and they’re such a deliciously tart and flavorful fruit to use in desserts. Mousse might sound fancy, but we can promise you that this recipe is pretty foolproof. Serve it on its own with a few fresh raspberries on top, or add it to cakes, trifles, or other desserts. It will be a hit and each bite will be like a little summery explosion in your mouth!

Rødgrød med fløde (Berry Porridge with Cream)
This dessert is not only one of the most challenging phrases to pronounce in Danish, but it’s also a classic for the summer months. That’s because it uses up delicious fruit, which you cook down into a thick sauce and top with fresh cream for a lovely light dessert. We use strawberries and raspberries, but you’ll also find this dish made with redcurrants, blackcurrants, gooseberries, blueberries, blackberries, rhubarb, and much more fruit. The berry porridge is traditionally served warm and topped with cold cream, although I bet ice cream would be a yummy choice too. Embrace this traditional Danish dessert and try it out this summer!

Koldskål og kammerjunkere (Danish Buttermilk Dessert)
When summer in Denmark arrives, sales of koldskål skyrocket. People eat it all summer, for breakfast, a snack, lunch, dinner, or dessert. Technically, it is a dessert, since it’s sweet, but many Danes enjoy it as a light summer dinner option instead. Koldskål is a buttermilk-based cold soup that’s slightly sweet and tastes of vanilla and lemon. It’s served with cookies called kammerjunkere, which are twice-baked so that they’re super crunchy. You can either add them whole or crush them up a bit, depending on your preference. We also serve our koldskål with fresh strawberries!
