The Easiest Cookies Ever!

These crispy and thin oat cookies, flavored with orange and vanilla and drizzled with chocolate, are so easy to make and so yummy! Seriously, you will never meet a simpler recipe – simply combine your ingredients, spoon onto baking sheets, and bake! If you like crispy and chewy cookies, then these are a dream come true. They’re almost like melted and hardened caramel with a great texture and flavor thanks to the oats, orange, and chocolate.

A Family Favorite

These cookies are one of our mom’s favorites, so we make them quite often, and they always turn out amazing. Last time we made them, she even said they tasted just like the ones our oldemor (great-grandmother) used to make! And we all know that in any family, that’s a huge compliment!

Tips & Tricks

Like we noted earlier, this is a super simple recipe! That means these cookies are great to make in big batches or as a gift for someone. Fair warning – they start out looking like weird blobs of buttery batter, but they will bubble up and expand SO much in the oven! Make sure they’re spaced out on the baking sheet! Also, you should let them cool before transferring them off of the baking sheet. They will be soft right out of the oven, but will harden and get super crispy once they cool!

As usual, you can customize this recipe as you see fit. Feel free to add lemon or lime zest instead of orange, drizzle with white chocolate, etc. Oh, and one more note – rolled oats work best for these cookies, but we often use old-fashioned oats and they still turn out great (although they don’t hold together as well). IMPORTANT NOTE:

We always bake using a digital scale and the metric system (grams and milliliters). We can’t promise that our cup measurements will be as accurate! Additionally, we bake and develop our recipes in a convection (fan) oven.

Ingredients
  

  • 70 grams (5 tbsp) unsalted butter, melted and (somewhat) cooled
  • 125 grams (1/2 cup + 1 tbsp) sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • Orange zest (optional)
  • 125 grams (1 1/4 cups) rolled oats
  • 2 tsp all-purpose flour
  • 1 tsp baking powder
  • Pinch of salt
  • Dark chocolate, melted

Instructions
 

  • Preheat oven to 365 degrees F (185 C) and line two or three baking sheets with parchment paper.
  • Combine melted butter with sugar. Make sure this mixture is cool enough that you can add the egg without scrambling it – you should be able to touch it without burning yourself! Once cooled, add the egg and whisk together. Add vanilla extract and orange zest.
  • In a separate bowl, combine oats, flour, baking powder, and salt. Whisk together.
  • Add the dry mixture into the wet mixture and whisk until there are no more dry spots.

  • Spoon the batter onto your baking sheets using two small teaspoons. You'll want to make sure that there is plenty of space between the blobs of batter, because these cookies are going to completely melt and expand in the oven.

  • Bake for 8-10 minutes, or until the edges are a deep golden brown. Let the cookies cool and harden for 5-10 minutes on the baking sheets before moving them onto a wire cooling rack (this step is super important if you want crispy cookies!).

  • Melt chocolate and drizzle or pour over the cookies to decorate. You can also dip them into the chocolate. Refrigerate until the chocolate sets and enjoy!
