Brownies with Daim

These yummy, chocolatey brownies are filled with crunchy pieces of the incredible Swedish caramel candy Daim. They're so easy to make and just absolutely DELICIOUS!

If you have arrived on this blog post today and have never heard of Daim, we hate to tell you that you’ve been missing out on the best candy bar of all time. Created by Marabou in Sweden, Daim bars are a better version of the American Heath bar. Picture super crunchy almond caramel covered in smooth chocolate – yum! So, we wanted to use this amazing candy bar in one of our recipes, and we thought what better vessel than the simple, delicious brownie? And voila – a Scandi-American dessert that combines the best of both worlds. Daim brownies!

If you happen to be in a country or place where you can get your hands on other flavors of Daim, we LOVE the orange one and think that it would be delicious used in this recipe. Last time I was in Copenhagen I also had the greatest candy experience of my life when I found a liquorice-flavored Daim bar, which I would also recommend. If you can find it, of course! Otherwise, Heath bars would also work for this recipe.

The recipe is easy, as it’s a basic brownie recipe with Daim pieces mixed in. We like to brown our butter, because it adds an amazing caramel flavor that complements the Daim perfectly, but you can just melt it if you prefer. Then, add your sugar and mix for about 30 seconds. Next, combine the dry ingredients in a separate bowl and chop up the Daim into little pieces. Add melted chocolate and vanilla to the butter and sugar, then start adding your 2 eggs, one at a time. IMPORTANT NOTE:

We always bake using a digital scale and the metric system (grams and milliliters). We can’t promise that our cup measurements will be as accurate! Additionally, we bake and develop our recipes in a convection (fan) oven.

Ingredients
  

  • 113 grams (1 stick) unsalted butter
  • 160 grams (3/4 cup) granulated sugar (160g)
  • 2 large eggs
  • 1/2 tsp vanilla extract
  • 100 grams chocolate, melted (about 1 bar or 3/4 cup chocolate chips)
  • 70 grams (1/2 cup) all purpose flour
  • 25 grams (1/4 cup) cocoa powder
  • Pinch of salt
  • 16 small Daim candies (about 100g)

Instructions
 

  • Preheat your oven to 350 F (176 C).
  • Melt your butter over medium-low heat and continue cooking until the milk solids start to turn a golden color. Remove from the heat because they will continue to brown!

  • Add the granulated sugar to the browned butter and whisk for about 30 seconds to combine. Let this cool for a few minutes.

  • In a separate bowl, mix together the dry ingredients (flour, cocoa powder, salt)

  • Chop up the daim candies into smaller pieces.

  • Transfer the butter and sugar mixture to a medium mixing bowl. Melt the chocolate either on the stove or in the microwave. Add in the vanilla extract and melted chocolate and whisk well to combine.

  • Add the eggs to the chocolate mixture one at a time, whisking to combine. Make sure the mixture isn't too hot so your eggs don't scramble!
  • Start folding in your dry ingredients until well combined. Note: If your batter looks split or lumpy, you can add a little more flour to bring it back together! Add in the chopped candies and fold those in as well.

  • Transfer to a parchment lined and greased baking tin (ours was a 9in x 6in glass baking pan).

  • Bake for about 30 minutes until a knife comes out mostly clean (it will have some crumbs stuck to it, as fudgy brownies shouldn’t be totally set in the middle!). Let cool before slicing and enjoy!

    Hello! Regarding the Brownies with Daim, can you please tell me what you mean by a “one bar of melted chocolate” (for example, a Hershey bar?)? Thank you!

      Hi! Yes exactly – we just updated the recipe to be a little more clear! You can melt either a bar of chocolate (which usually corresponds to 100g), or about 3/4 cup of chocolate chips, or 100g of any chocolate!
