Apples and Autumn

Is there anything more autumnal than apples? Add a few warm spices, like cinnamon or cloves, and you’ve got the simple but delicious flavors of autumn! It is one of our favorite seasons because the weather is getting colder and everything just feels more cozy when it’s chilly outside. And actually, apple season is already wrapping up, even though we’re only halfway through October. So if you want to go out apple-picking – go soon! That being said, you can (most likely) get apples year-round wherever you are, so for today’s recipe, don’t worry about going apple-picking beforehand.

Today’s Recipe

Today, we are sharing one of our most aesthetically pleasing and absolutely delicious fall recipes. This is an æbletærte, or apple tart, featuring a shortcrust pie pastry, almond filling, and apple arranged in a beautiful rose on top. The textures are wonderful, with a crisp and flaky pastry base and smooth almond filling. The apples on top add a nice freshness while also adding sweet or tart flavor (depending on which type of apple you use). The sweet almond filling is creamy and tastes just like marzipan, so if you are a big almond fan, you should try this out! We love this recipe because it is so simple but looks extremely impressive if you spend a few extra minutes arranging the apple slices in a nice pattern.

How To Make Æbletærte

Start by making your pastry dough and chill in the fridge. While it rests, combine your sliced apple and other topping ingredients in a bowl and set aside. Then, roll out and line the pie tin with the pastry. If you want to, you can blind bake the pastry in the oven for about 10 minutes, but we don’t do this! Blind baking is typically used to ensure you don’t get a soggy bottom but this is not as much of an issue in this tart, as the almond filling does not provide much moisture. So, the next step is to make your filling by mixing the ingredients together in a food processor or blender. Pour this into the pie crust and spread it out. Then, arrange the apple slices on top in whatever pattern you like. Bake and enjoy! Leave a comment down below if you try it out.

IMPORTANT NOTE:

We always bake using a digital scale and the metric system (grams and milliliters). We can’t promise that our cup measurements will be as accurate! Additionally, we bake and develop our recipes in a convection (fan) oven.

Ingredients
  

Dough

  • 113 grams (8 tbsp or 1 stick) cold, cubed, unsalted butter
  • 200 grams (1 + 2/3 cup) all purpose flour
  • 1/8 tsp salt
  • 2 tbsp granulated sugar
  • 3-4 tbsp ice water

Filling

  • 150 grams (1 + 1/2 cup) almond flour
  • 150 grams (1 + 1/3 cup) powdered sugar
  • 2 egg whites (from large eggs)
  • 1/2 tsp almond extract

Topping

  • 2 tbsp brown sugar
  • 2 tsp cinnamon (you can also use cardamom instead!)
  • 3 large apples, sliced thin
  • 1 tbsp lemon juice
  • Pinch of salt
  • 1 tsp vanilla bean paste or vanilla extract

Instructions
 

  • Make the tart dough by combining flour, salt, and sugar in either a mixing bowl or a food processor.
  • Add your butter either by hand (crumbling the cold butter into the flour until it your butter is broken down into smaller than pea size chunks or it resembles sand) or in the food processor (add your butter and pulse until the mixture resembles sand).

  • Add ice water (or just very cold water) and pulse or combine by hand until the dough starts to stick together. It’s okay if it’s still a little crumbly, but if it’s not coming together at all, add as many tablespoons of ice water until the dough comes together.
  • Wrap up your dough in plastic wrap and chill for at least 30 minutes. Towards the end of the resting time, preheat the oven to 190 °C or 375 °F

  • Prepare the marzipan filling by combining almond flour, powdered sugar, egg whites, and almond extract in a bowl until it forms a smooth paste. You can also combine in a food processor!
  • Right before the dough is done resting, thinly slice your apples and add them to a mixing bowl with brown sugar, cinnamon, lemon juice, pinch of salt, and vanilla bean paste/vanilla extract. Set aside until ready to use.
  • After the dough has rested, roll out into a 12" circle, about ⅛" to ¼" thick. We used a 10" tart pan for this recipe!

  • Prepare a tart pan by buttering the sides and the bottom and adding a piece of parchment paper to the bottom.

  • Roll the dough onto the rolling pin and transfer to the tart pan by unrolling it over the tart pan.

  • Lower the dough into the edge of the pan. Press down the corners gently, trying not to stretch the dough. If you need to patch any holes or add more dough to the edges to fill the fluted edge, just press any excess dough onto the hole or thin edge.

  • Clean up the edges by removing any excess dough by running a knife along the edge.

  • Put the tart in the freezer for about 5 minutes to cool down the butter in the dough from working with it.
  • Add marzipan filling to the tart, spreading it evenly across the base.

  • Arrange the sliced apples across the top of the tart in whatever pattern you like! We like to arrange them in a circular pattern, starting from the outside in, to create a rose.
  • For this pattern, overlap each slice halfway with the previous slice (the rounded edge of the piece of apple facing upwards).

  • Continue arranging the slices around in circles until you get to the very center.

  • Bake the tart for 35-45 minutes.
  • Remove from the oven and let the tart cool.
  • Once it has cooled, you can remove the edge of the pan. Cut into slices, top with whipped cream or ice cream, and enjoy!
