Today’s focus: Savory summer recipes

Summer isn’t just for sweets – we also love coming up with new savory recipes at this time of year! Of course, we’re all looking for lighter and brighter recipes in the summer months, eating fresh produce and trying to avoid turning our ovens on too much. And, we’re typically on the move a bit more, spending time outside, especially at mealtimes. So whether you love a BBQ with friends, or picnics with family or just a hike on your own, it’s good to have some recipes up your sleeve that are portable but still hearty and tasty. All of these great parts of summer have led us to develop this list of recipes for you: the savory summer recipes that we absolutely love and promise will become a memorable part of your (hopefully) sunny summer!

When we were kids, we loved a good ham and cheese snack. Whether it was a ham and cheese sandwich (usually melted and crisped up in the oven) or a bread roll with ham and cheese baked into it, this was a classic part of our childhood. Honestly, if you’re Danish or American or British, it was probably a part of yours, too! Or at least some variation of it – it’s just such a simple and delicious flavor combination. Now, think of a crescent-shaped roll filled with ham and cheese and think of how much of a hit that would be with kids and adults alike. That’s exactly this recipe! These are easy and so tasty, so give them a try.

Pesto, Sundried Tomato, and Olive Bread

If you’re a fan of Mediterranean flavors, this recipe is absolutely calling your name. We spent a few years living in Greece as kids, so olives pretty much became a part of our regular diet back then, and we still love them. The pesto and sundried tomatoes came into this recipe because we thought the flavors all worked really well together: salty, savory, but still nice and fresh. This is one of those flavored loaves that certainly is not lacking in taste, so you don’t even need to top it with anything to enjoy the lovely combination of flavors and textures!

Did you know that you don’t have to only pull your waffle iron out when you’re making sweet ones for breakfast? Instead, try our twist – savory potato waffles, pretty much just a hashbrown in waffle form. These are phenomenal because, like sweet waffles, they’re very much a vessel for toppings that you like! So, you could embrace the Scandi element and do smoked salmon, dill, cucumber, and sour cream, or enjoy a brunch version with eggs and bacon on top. Yum!

This is also a great option for packing sandwiches to take with you on a road trip or meal-prepping wraps for your work or school lunches. This is a firm favorite of ours when it comes to summer savory recipes. But it’s honestly so delicious all year round! If you or your kids/friends/family love pizza (and who doesn’t?), you should try these. Filled with cheese and pepperoni, the flavors will immediately remind you of pizza, but they’re hearty and soft, making them the perfect snack! Bake these once, and you might find yourself having to bake them a lot more regularly because they’re so irresistible.
